Decorate: Gallery Wall

First of all, I'm just going to apologize for the not-so-great picture quality we've got going on here. You can somewhat-tell in the picture below that I have this fabulous little arrangement on our living room wall right by the window. We don't get that much light in our apartment but, of course, light was pouring through on the day I went to take these pictures. Anywho...

I have seen so many pins of gallery walls that I just love (I've pinned a lot of them to my "decorate" board here). This is my version of a gallery wall that I finally put together this fall:

I actually created the P and S myself - I suppose I'll probably save that story for another tutorial blog post for another day. I gotta get you to come back somehow :)

Do you ever feel like the last thing you want to do is sit down and write a blog post, but you know you should? I mean, you can't really expect a lot of productivity out of me after 9:00 pm and yet here I am, finishing up a blog post that I almost didn't write and the only reason I did is because it seemed like this one wouldn't be too much work. I'm just completely distracted tonight by a few really important things I have on my mind: 

What snacks should we pack for this weekend?
What jacket am I going to wear with that blouse+leggings outfit that won't make it look stupid?
Oh. Em. Gee. Give me the weekend now!

Parks and I have Friday off for a late Anniversary Weekend Getaway! I'd love to talk more about it, but you'll have to stop back on Friday sometime for the deets. Oh, and I'll be posting my first-ever vlog on Friday, too. Then you can decide if you still want to be friends with me or not. Happy Thursday - peace out lovers!

Eat: Kooky Bars

Would you believe that one dessert can involve cookies, brownies, and reese's?! Well, believe it people because I'm about to blow your mind. I found the recipe on Pinterest here, and you might notice it was only a pin - no link, no name, nothing more than the basics. So I obviously had to come up with a name for these mind-blowing bars and Cookie-Brownie-Reese Bars doesn't have the same ring as cool dessert names like "Crack Brownies" or "Better than Sex Cake". Which brought me to Kooky Bars. Get it, "cookie" kooky bars?! Go with it.

Do not make these if you are trying to eat clean, lose weight, or cut down your sugar intake! 

1 box brownie mix (including necessary ingredients)
16-oz. ready-to-bake cookie dough
12 (approx.) Reese's cups

Preheat oven to 350 degrees. Evenly distribute and smoosh the cookie dough into the bottom of each cupcake spot. Place one Reese's cup upside-down on top of the cookie dough. Prepare the brownie batter as instructed. Spoon 1-2 spoonful of brownie batter on top of each Reese's cup. Bake for 18-20 minutes.

+ If your cupcake pan is nonstick you do not need to spray it with cooking spray.

+ You will not use all the brownie batter. Only use 1-2 spoonfuls per cupcake. I highly recommend making use of the remaining brownie batter by baking a small batch of brownies or eating raw.

+ There is absolutely no reason why you need to wear gloves when making these. I truly just despise getting my hands dirty and have 2 boxes of latex gloves under our kitchen sink...

The Perfect October Weekend


We finally got around to some cliche October activities this weekend! Saturday was a nice, fall day - a little cool (and by a little cool, I mean in the 40s), but not too windy and full of warm sunshine. We didn't even know of a nearby pumpkin patch yet since we're still kind of new around here, but we turned to google, found a local place, and hit it up Saturday afternoon. We walked through the corn maze, watched the cutie-pie kids playing on the haystacks, and bought some pumpkins. It was so fun spending a Saturday afternoon not doing things that we have to do.

Note to self: forget the to-do list and just have fun more often. Now all we need to do is carve them sometime within the next 3 days before Halloween season is already done.

One Year Here

Friday was a big day for us: it was our official one-year anniversary of being here. October 25, 2012 was moving day. We left our one-bedroom apartment - the first place we lived together + our first home that we created after tying the knot. We said goodbye to our nearby family and friends and drove away from our hometown to start a new adventure.

Neither of us had really ever moved before, other than into a dorm room or house with friends for a short period of time in college. This time it was a little nerve-racking, but exciting. We moved out here for our jobs, to help open up a new location for a family business, and we actually work together. Some people think that would be awful, annoying, boring, frustrating, hard, or any of the above; and I'm not going to lie, sometimes it can be one, or all, of those things. But honestly, for the most part it's really kind of good. We've learned a lot: about each other, our priorities in life, who we love the most, and that sometimes it's totally worth a 10-hour car ride that costs 150 bucks just to see those people.

Although we know we're not going to be here forever, and that the "goodbye" we said to our hometown is kind of turning into more of a "see ya later", neither of us would change this time for anything. Life begins at the end of your comfort zone, right? Thank God my comfort zone isn't that big so it doesn't take me long to get there.

Fall Decor Essentials

I love the fall season. Crisp air, sweaters, and all the fun decor items are my favorites. Sadly, around here it's starting to feel like the fall season will be coming to a close soon. If you follow me on instagram, you probably saw that we actually had some snow accumulation the other night. Thankfully, the following day was full of sunshine and melted that crap right away; I'm confident we'll at least get a few more nice, fall days before the winter season sets in. 

I really enjoyed a lot of my fall decorations this season. We live in a small, one-bedroom apartment so I can't get too crazy but I do what I can. I've written before about my new love of printables and am finally sharing a photo below of my current printable for this season. Also, I need to mention that some of the decor below (witch, pumpkin, ghosts + a few others) were painted by my mom, aunt, and grandma many years ago! How cool is that? In my eyes, these are the essentials for fabulous fall decor:
  • Pumpkins (fake and real)
  • Candles (and/or a Scentsy)
  • A new fall printable
  • Candy Corn
  • Sparkles (an essential for fabulous decor in any season!)
  • A few Halloween touches

You know you're old when...

You're super excited about the newest grocery store opening; including the fact that their cleanliness and produce selection make them the hottest one in town. {Oh, and you even instagram your excitement.}

You're in the process of writing a blog post about your favorite cleaning items...

The highlights of your Thursday nights have turned from bars + jello shots to Grey's Anatomy + Parenthood.

You find yourself having thoughts about how sad it is that today's youth are growing up way too fast. {This song made me think about this.}

You remember hopping on the computer in the library on your college campus to check your Facebook because your phone could only text and make phone calls.

Your Friday night activity's have turned into a yummy homemade dinner, followed by snuggle time with your spouse, and an early bedtime.

You wake up at 4:30 AM! Who does that? I do. When I was in college it practically killed me to even make it to 8am class.

Your weekend plans have changed from parties and football games to involve painting dressers and making headboards.

You remember when you didn't get what the point of Facebook was.

There was a time when you didn't understand why someone would ever want to type a random thought in 140 characters or less for the whole world to see.

You wonder wtf happened to Oregon Trail and Carmen Sandiego.

The dial tone still sometimes brings back haunted memories of that horrible dial-up AOL internet.

I'm only 25 and I've been feeling old lately! Do you ever feel like this?

if we're being honest here

if we're being honest here...

being sick last week sucked. before i knew it, it was thursday at 8:30 am and all i had accomplished since that sunday was showering, getting dressed that morning, and making it to work for the first time that week. bummer. dude.

i'm not really feeling that guilty about the lack of posts last week. the ones that made the cut were the ones i had ready ahead of time. practically zero blogging happened last week.

i don't take the time or put in the effort to reply to commenters. i'm sorry, but it's just too much work when i can't just send you an e-mail to reply to your comment. this is a good tutorial post to make sure this isn't you!

on a scale of 1-10, with 1 being "get it together, girl :( " and 10 being "you go, girl :) ", i'm at about a 5 on my october goals. my routine is healthier but being sick threw me off the exercise train temporarily. i fell behind a bit with the love dare but am still working on it. i have been much better about worrying less and enjoying the moment more - it's not always easy, but i'm loving it. only 11 days left in october, already?!

i've started thinking about christmas presents! i think november 15th - january 2nd is in my top 3 favorite times of the year.

i think i spoke to less than 10 people this weekend. the hubs was gone and after being sick last week i used this weekend to catch up and loved it: gym, cleaning, errands, blogging, and organizing/decorating kept me really busy.

i'm so much happier when our whole apartment is clean. it's weird but i feel completely relaxed and pulled-together if the sheets are fresh, i can see vacuum lines in the carpet, and there are zero dust bunnies.

i hate bra shopping. just because i ask the victoria's secret lady one question does not mean i want her to come in my fitting room when i'm topless. thanks, but no thanks.

since parker was gone i decided to use a leftover gift card to treat myself to a pedicure. i'm sure they were talking about my sweatpants-clad, makeup-free self in their language that i couldn't understand but it was still mighty relaxing and just what i needed after a day spent working out and cleaning. oh, and i got my nails done spur of the moment, too. #oops #sorrynotsorry

that's all. sorry for the mish-mash, rambling, photo-less post but it is what it is, folks. i need to go brown like 3 pounds of hamburger for this week's meal prep.

Eat: Parmesan Chicken Wraps

Parmesan Chicken Wraps

Yields: 6 wraps

I found the original recipe on Pinterest here. We've made these a few times and, I have to admit, I use the original recipe as more of a guideline. I just make sure I have chicken, spinach, egg rolls, and cheese and just kind of add what I think looks good. Also, both times we've made this we just used leftover chicken - once we used leftover baked chicken and another time we used leftover grilled chicken breasts. Not only is it a great way to use up leftovers, but it makes these wraps super easy and fast!
6 egg roll wrappers
8 oz shredded chicken
1 cup marinara sauce
1 cup baby spinach leaves
1/2 cup mozzarella cheese
1/4 cup parmesan cheese

Preheat the over to 400 F. Cook your chicken if you need to. Place your chicken in a medium-sized mixing bowl. Using two forks, shred the chicken by pulling against the grain of the meat. Add the marinara sauce to the chicken and mix together. On some sort of clean work surface, lay out your six egg roll wrappers. To prevent them from cracking keep them from getting dry by sprinkling them, or even brushing them, with water. 

Lay a few spinach leaves on each egg roll wrapper. Evenly distribute your chicken mixture on all 6 egg roll wrappers, keeping in mind that you will eventually fold these into triangles. Sprinkle the mozzarella and parmesan over the chicken. Fold the wrappers to make a triangle shape, covering the filling, Press the edges to seal - you can get them wet again to help. 

Place all six on a greased cookie sheet and bake for about 12 minutes. They are done when they start to turn a light golden brown.

They are delicious as an appetizer or even part of your meal. Have fun and eat up!

Post Numero 100

I felt like I should acknowledge such a landmark: my 100th post. It's kind of weird actually because I just looked back and I wrote my first post on September 6th, 2012. The first blogs I read are (in no particular order) one, two, three, four, and five. My First Blog-iversary has passed and I am just now reaching Post Numero 100. But in the 404 days that have happened since I started my blog there have been a lot of changes and I've learned so much. 

The biggest change, and the reason I think I started my blog in the first place, we moved. We were both born, raised, and lovin life in our hometown in ND and we moved 4 hours away last October. I thought blogging would be a fun way to document life, keep people updated, and enjoy a new hobby. It's funny how it's turned into so much more than that. I still love documenting life and keeping people updated through photo-dump posts and sharing funny stories. I still love that it's a hobby of mine and keeps me busy and trying new things. But what I mostly love is the community and the environment - which is totally weird because it's only through a freaking computer screen, and I'm sure if you're a non-blogger you probably don't get that.

Blogging is a place to write, share stories, and connect with people. It's something that is always changing so there's always something new to learn. Blogging is a way to share what you think and get support through all the kind commenters out there. It's a place to inspire and be inspired. Those are my favorite parts about it.

So why am I only on my 100th post when I started this cyber-adventure 404 days ago? The hardest part for me was, and probably still is, balancing blogging and life. You can creep through all my old posts and you'll see two big gaps in time - two phases where I just had to stop for a little bit. My OCD personality finds a new hobby, becomes obsessed with it, and gets burnt out when it's too much to handle - that's just the way I am. I've talked about this before with exercising and having a healthy daily routine. But it just takes thought, practice, and dedication to make time for all the different things you love. I have finally figured out a way to work, exercise, enjoy time with my husband, relax, complete diy projects, save time for Parenthood, and blog. It's tough and it didn't happen the first time, or the second time. But now, finally, I have found the balance. Third time's the charm :)
