"i could be skinny but food"

I think my husband said it best one night when talking about eating healthy / losing a couple pounds / exercising / etc : "I just love food and no one can take that away from me!" He said it with so much enthusiasm and it sounded so funny it just made me laugh but it is SO TRUE. I love food. I love salty. I love sweet. I love every meal. And I love snacks. Thank goodness I'm not 400 pounds. 

I'm always looking for new ways to satisfy cravings without completely 'cheating' on healthy eating, but at the same time, I don't want to spend an hour preparing a meal, either. In the past 2 weeks these are some of my favorite homemade, easy, guilt-less meals and accompaniments:

Breakfast egg sandwiches.
We've actually been eating these for dinner rather than breakfast. English muffin + fried egg + 1 slice velveeta cheese + 1 slice grilled canadian bacon. Easy and delicious. Plus it's sort of fun to have breakfast for dinner.

Greek salad.
This is one of my favorite lunches recently. Romaine lettuce + gorgonzola crumbles + craisins + Greek dressing. Low-cal and spring-y. {Lately we've been buying 'Hearts of Romaine' rather than iceberg lettuce and are loving it. It has many more vitamins and a little more flava.}

Lunch a la carte.
This is really just a random lunch that I didn't know how to describe. Leftover lemon pepper chicken slices + hearts of romaine + swiss cheese + wasa crispbread + apple. I use the first four ingredients to make a little cracker-sandwich and finish it off with an apple. Crunchy and colorful. {Check out the wasa crispbreads. I get the multi-grain ones and love the flavor and the fact that they're better for you than bread or wheat thins.}

Grapefruit Guilt-free dessert.
I used to always get annoyed by people who claimed that they could satisfy they're dessert craving by having some sort of sweet fruit; however, grapefruit + powdered sugar is the ultimate tool for a sweet tooth. Is it as good as Dove chocolate? No, don't be ridiculous. But it did satisfy my sweet craving for the evening. I served it to Parks and myself after dinner one night. Plus, grapefruit seems summer-y and we could use all the summer we can get.

  1. I'm the same way! I love food and I can't give it up. I just started using My Fitness Pal and it says I can only have 1200 calories. I was starving by the end of the day today.

  2. Wow, I never would have thought about grapefruit and powdered sugar...what a great idea! I'll definitely have to try that one, thanks for the suggestion! :)

  3. well I just added grape fruits to my grocery list because that looks delicious!!! My hubby and I are with you! We want to slim down a bit because we have been out of control lately, but we love food too much to be real thin and food brings us so much joy!

  4. yum, yum, and yum!! I love food too, and crave flavor! Right now, you've got me craving a huge salad :) But one with all the toppings and a sweet dressing!!
